The core problem

The cut is a black art.

A distillery ferments a wash, then distills it and makes the critical cut: separating volatile heads that carry methanol and harsh notes, and late tails, from the desirable hearts. A few minutes or a degree too early or late yields harsh, off-spec, low-yield, or unsafe spirit. And it drifts constantly with wash, still condition, throughput, and ambient conditions.

Then premium spirit matures for years in casks whose extraction, oxidation, and evaporation (the angel's share) are hard to predict, locking up enormous capital. Plant managers run blind on real-time cut quality, congener profile, fermentation health, maturation, energy, and yield.
